Crispy fried Malony goes well with sweet and spicy flavored with miso.
Ingredients (2 servings)
40g/1.4oz Malony |
50g/1.8oz simmered bamboo shoots |
1/2 clove of garlic |
5g/0.2oz ginger |
1 bunch of mizuna |

1 tablespoon sugar |
3 tablespoons red miso |
1/2 teaspoon Tobanjan |
1 & 1/2 tablespoons Japanese sake |
1 & 1/2 tablespoons soy sauce |
100ml water |
1/2 tablespoon vegetable oil |
100g/3.5oz minced pork |
< cornstarch mixture > |
1 tablespoon corn starch |
1 tablespoon water |
1 teaspoon sesami oil |
Amount of vegetable oil |
A few pinches of shredded red pepper to taste |
Directions
1. | Mince the bamboo shoots, garlic, and ginger. |
2. | Cut the mizuna into thin strips of 4cm in length. |
3. | Mix ingredients of < A >. |
4. | Fry the garlic and ginger with vegetable oil on heat. When starts smell nice, add the minced pork and fry it browns. |
5. | Add the minced bamboo shoots and fry, then add the < A > mixture. When it starts to boils, reduce to low heat, then thicken it with the cornstarch mixture and add sesame oil. |
6. | Fry the Malony in vegetable oil little by little. |
7. | Break the fried Malony, and put it in a serving dish, put the mizuna and fried meat on top. Add shredded red pepper as you like. |
